Simple Stir-Fry
Ingredients:
¼ small red onion
2 carrots
1 stock of celery
½ bell pepper
½ small zucchini (seeds removed)
2 slices of turkey bacon
1 large egg
1-2 cups of cooked brown rice
butter for frying, salt and pepper to taste.
Instructions:
Chop your bell pepper, carrots, red onion, celery, and zucchini to preference.
Put a pan on the stove and set the heat to medium.
Once pan is heated, put a knob of butter in the pan. Once the butter is completely melted, add in your turkey bacon and fry it on both sides until golden brown.
Once fully cooked, remove from pan and add in your egg. (cook to preference).
Once cooked, remove egg from pan and add in your red onion. (fry until semi-translucent).
Add in your carrots and celery. Fry until tender. Once these are cooked, add in your zucchini. Fry until tender.
Once all veggies are cooked, remove from pan. Place brown rice, veggies, turkey bacon, and egg in a bowl, season with salt and pepper, and enjoy!
Tips and Tricks:
I chop my meat into bite-sized pieces so I get protein and flavor in every bite.
I add in more knobs of butter between frying the bacon, egg, and veggies for more flavor.
I cook my zucchini last because I dice my veggies small, so the zucchini cooks the fastest. (It will go mushy if you cook it too long).
Order of how I chop the veggies, from smallest to biggest: Onion, carrot, zucchini, celery, pepper.
Add hot sauce for flavor. (I use Sriracha).
